These scalloped potatoes recipes are super easy to follow.
Traditionally this recipe is made by thinly slicing potatoes that are combined with butter, cream and tons of cheese before being baked, however I’m sure that you don’t want tons of saturated fat in your diet 😉 and you may want to avoid animal products for ethical or health reasons. 😊
I’ve tried 2 variations of this recipe by using different bases for the creamy sauce.
One of the variations contains cashews as the main ingredient. The other one uses Silken Tofu.
By using easily accessible plant-based ingredients I’ve managed to create scalloped potatoes that are super creamy, rich, and flavorful!
These recipes are:
Plant-based / dairy-free
Gluten free
Oil Free (only healthy fats in the cashew based version)
Super easy to make
Perfect comfort food that we all need these days when staying at home makes us want to indulge in high fat meals.
This recipe has different names: Scalloped Potatoes, Au Gratin Potatoes, Potato Gratin, Dauphinoise …. whatever you want to call it the bottom line is: It is Delicious!
Here is the recipe:
750 grams / 1 and ½ pounds Potatoes
2 Onions
Tofu based “cheese” sauce:
1 block of Silken Tofu
1 tbsp of paprika
1/2 tsp turmeric powder
1/2 tsp black pepper
1 tbsp bacon seasoning
1 tbsp miso paste
1 tbsp vegetable stock concentrate or half a cube of vegetable bouillon
1 tbsp Garlic powder
1/2 Cup of Soy Milk
2-3 tbsp Nutritional Yeast
Cashew based “cheese” sauce:
1 cup of Cashews
1 tsp black pepper
1 tsp cumin
1/2 tsp smoked paprika
1/2 tsp turmeric powder
1 tbsp miso paste
1 tbsp vegetable stock concentrate or half a cube of vegetable bouillon
1 tbsp Garlic powder
1/2 Cup of Soy Milk
2-3 tbsp Nutritional Yeast
Bake in a preheated oven at 180 C / 375 F for 30-40 min until golden brown.
