Chicken Pakora Ingredients:
Chicken:
500 grams boneless chicken breasts or thighs, cut into bite-sized pieces
Marinade:
1 cup gram flour (besan)
1/2 teaspoon turmeric powder
1 teaspoon cumin powder
1 teaspoon coriander powder
1/2 teaspoon red chili powder (adjust to taste)
1/2 teaspoon garam masala
1 teaspoon ginger-garlic paste
2-3 green chilies, finely chopped (optional)
1 small onion, finely chopped
A handful of fresh cilantro (coriander) leaves, chopped
Salt to taste
Water as needed to make the batter
For Frying:
Oil (vegetable or canola) for deep frying
Chicken Kabab Ingredients:
Chicken:
500 grams boneless chicken breasts or thighs, cut into bite-sized pieces
Marinade:
1 cup plain yogurt
2 tablespoons ginger-garlic paste
1 tablespoon lemon juice
1 tablespoon cumin powder
1 teaspoon paprika
1 teaspoon ground coriander
1/2 teaspoon turmeric powder
1 teaspoon garam masala
1 teaspoon chili powder (adjust to taste)
2 tablespoons fresh cilantro (coriander) leaves, chopped
2 tablespoons fresh mint leaves, chopped (optional)
Salt to taste
For Grilling:
Lemon wedges for serving
Fresh cilantro or mint for garnish
Instructions:
Chicken Pakora:
In a large bowl, combine gram flour, spices, and chopped herbs.
Add chicken pieces and mix well to coat.
Gradually add water to create a thick batter that coats the chicken.
Heat oil in a deep frying pan over medium heat.
Drop spoonfuls of the batter-coated chicken into the hot oil.
Fry until golden brown and crispy, about 5-7 minutes.
Drain on paper towels and serve hot with chutney or ketchup.
Chicken Kabab:
In a large bowl, combine yogurt, spices, and herbs.
Add chicken pieces and mix until well coated.
Cover and refrigerate for at least 1 hour (preferably overnight) to marinate.
Preheat your grill or grill pan over medium-high heat.
Thread marinated chicken onto skewers.
Grill for 8-10 minutes, turning occasionally, until cooked through and slightly charred.
Serve with lemon wedges and garnish with fresh cilantro or mint.
