Hello Dear Friends, Today I am cooking Gluten Free, meatless Rolled Zucchini Lasagna. This lasagna is very creamy and tasty. I am making my homemade marinara sauce with fresh tomatoes, onion, garlic, chili, paprika. The filling is with Ricotta, Parmesan and Mozzarella cheese. All this rolled in a beautiful, elegant zucchini rolls. Perfect gluten free lunch idea .

ROLLED ZUCCHINI LAZAGNA

4 sliced zucchini
( I sliced 27 slices)
1 sliced onion
3-4 large tomatoes
1 tbsp. tomato paste
1/2 tsp. crushed chili
1/2 tsp. paprika + 1pinch extra
4 – 5 tbsp. olive oil
1-2 cloves of garlic
1 egg
1 cup Parmesan cheese(1/2 for the filling, 1/2 to sprinkle on top
1 cup Mozzarella cheese
1 cup of Ricotta cheese
5 tbsp. of chopped fresh parsley
2 for the sauce, 2 for the cheese filling, 1 to decorate
Bake for 25-30 min.
on 425F
