1.6 kg pork shoulder
1 tbsp sea salt
2 tbsp dark maple syrup
1 tbsp bark wine vinegar
1 tsp smoked paprika
1 tsp black peppercorns
1 tsp cumin seeds
1 clove of garlic
1 tsp dry thyme
Extra virgin olive oil to taste
*boiled potato, butter, chives for serving
