Recipe for a Chilli Beef and Sweet Potato Nachos Sharing Platter: https://youtu.be/IP56tYhE80Y .
In this film I’ll be making an extremely tasty and textured chilli beef and sweet potato nachos sharing platter that would work well for a gathering of friends.
The recipe begins by making a wok of chilli, the ingredients for this are as follows:
800g minced beef
3 onions
2 red chillis
1 large sweet potato
1 courgette
12 plum cherry tomatoes
10 mushrooms
1 tin of chopped tomatoes
1 tin of kidney beans
Three teaspoons of dried mixed herbs
1 teaspoon of dried ginger
2 teaspoons of paprika
2 teaspoons of onion granules
1 teaspoon of cayenne pepper
2 teaspoons of dried chilli flakes
2 teaspoons of sugar
2 Oxo cubes
For the cheese crumble topping:
200g breadcrumbs
300g grated Cheddar and Cheshire cheese
Also this recipe requires:
4 spring onions
1 large bags of nachos
Directions are as follows:
1. Fry the onions and red chillies in some olive oil in a wok.
2. Chop the minced beef and add it to the wok.
3. Chop the sweet potato up into small cubes and put it into another pan with some water and salt and bring them to the boil.
4. Dice the courgette and add it into the wok with the minced beef, onion and red chillies.
5. Cut the cherry tomatoes in half and add them into the wok.
6. Chop up the mushrooms and add them to the wok.
7. Add the tin of chopped tomatoes and the tin of kidney beans into the wok.
8. Add the dried mixed herbs, dried ginger, paprika, onion granules, cayenne pepper, dried chilli flakes, sugar and Oxo cubes into the wok.
9. Once the sweet potatoes have boiled, drain them and then add them into the wok.
10. Stir everything and then leave the wok to simmer for 15 minutes.
11. Leave to rest and infuse (I left it for 6 hours).
12. After the chilli has infused, turn on the heat and warm it through.
13. Mix the grated cheese and breadcrumbs.
14. Put the nachos into a large deep tray.
15. When the chilli has warmed through, ladle it onto the nachos.
16. Pour the cheese breadcrumb mixture onto the chilli.
17. Bake in the oven at 200 degrees celsius for 20 minutes.
18. Chop the spring onions and sprinkle on top.
Serve and enjoy!
