Ratatouille is a French Provençal stewed vegetable dish. Ingredients include aubergine (eggplant), courgette (zucchini), tomato, garlic, onion, and leafy green herbs common to Provence region. Ingredients are cooked separately, then combined and cooked slowly together to attain smooth consistency and great flavor. Step by step video. Enjoy!

Ingredients for 4 people
1 large eggplant
1 large zucchini
250g (1/2 lbs) cherry tomatoes
1/2 onion
3 cloves of garlic
3 tablespoons chopped parsley
fresh thyme
fresh marjoram
salt to taste (1/2 teaspoon)
black pepper to taste (1/4 teaspoon)
4 tablespoons olive oil
