Ingredients for Quick and Easy Egg Curry with Peas and Potato

Shelled and Boiled Brown or White eggs- 4
2 Big Sized Boiled Potatoes cut into 8 pieces
Turmeric Powder- 1/4 tsp
Kashmiri Chilli Powder/Smoked Paprika- 1/4 tsp
Green Cardamom- 4
Bay Leaves- 1
Cloves- 4
Bayleaves-1
Cumin seeds- 1 tsp
Whole Peppercorn – 8/10
Salt – As per taste

Cooking Oil- 3 Tbsp
Green Chillies- Slitted- 1-2
Onions chopped-1 medium
Ginger Paste- 1 1/2 Tbsp
Garlic Paste- 1 Tbsp
Tomato chopped – 1 large
Green Peas- 1/2 cup

Turmeric Powder- 1 1/2 tsp
Kashmiri Chilli Powder- 1 1/2 tsp
Coriander Powder- 1 tsp
Cumin Powder- 1 1/2 tsp
Garam Masala Powder- 1 1/2 tsp
Ghee- 1 Tbsp

Method:

*Poke the boiled eggs with Tooth Pick or Fork.
*Heat 1 tbsp cooking oil in the pan
*Add 1/2 tsp Turmeric and 1/2 tsp Kashimiri chillies powder/ smoked paprika in the oil
*Now add egg and fry for 1 minute
*Then in the same oil fry boiled cut potatoes for 1 minute
*Keep the egg and lightly fried potatoes aside.
*Next heat 2 1/2 tbsp cooking oil in a clean pan
*Add cloves, whole peppercorns, cinnamon stick and Bayleaf in the oil and Stir for 30 seconds until the whole spices start to splutter
*Next add whole cuminseeds in the oil
*Add chopped onion and stir fry until golden
*Then add garlic paste and ginger paste
* Add coriander powder and cumin powder
* Add chopped onion
* Add salt as per taste, 1 tsp Kashmiri Mirch powder/ smoked paprika and 1 tsp turmeric
* Stir and then cover the pan
* Add green peas when the oil comes out of the spice mix and tomato is cooked
* Add the slit green chilies for flavor
* Add 1 cup warm water and let the gravy boil
* Add fried boiled potatoes and eggs to the gravy and let cover the pan
* Add 1 1/2 tsp of Garam Masala powder(optional)
* Lastly add 1 tbs Ghee to make the gravy more tasty and flavorful
Egg Curry is now ready to serve!
