An easy Chicken Tikka Masala recipe from the comfort of your own home. In only 30 minutes!
This is by no means a traditional Chicken Tikka Masala, but instead a really quick and DELICIOUS variation on a TASTY Indian classic.
Full of great flavour, this recipe will become a go-to dish when you need a GOOD alternative for your weekly menu or if you just don’t want the expense of a takeaway.
The thing that makes this recipe easy is the garam masala. It’s a spicy mixture that you can buy or better still make yourself, consisting of beautiful aromatic spices such as cumin, coriander, green and black cardamom, cinnamon and nutmeg, all of which have amazing taste and great health benefits.
It doesn’t stop there, you can adapt this recipe to suit your taste. It works well with vegetables, fish and prawns and if you prefer it without the heat just remove the chilli!!

Livio’s recommendation:
The wine that I would ideally recommend would be white wines, medium bodied, with the wonderful aromas of fruits that are crisp and fresh on the palate.
• Chardonnay unoaked from South Africa
• Pinot Grigio from Italy
• Picpoul de Pinet from France
• Torrontes from Argentina
If white wines are not for you a light red would work just as well!
I would recommend the Pinotage from South Africa

For this recipe you will need:
Serves 2
• 350g chicken breast (diced bite-sized)
• 100g tomato purée
• 2 tbsp garam masala
• 1 tbsp paprika
• 2 tbsp olive oil
• 1 fresh chilli
• 4 scallions ( spring onions )
• 2cm fresh root ginger
• 3 kaffir lime leaves (rehydrated for 5 minutes in boiling water if dry)
• 2 garlic cloves
• 200ml chicken stock
• 300ml double cream
• fresh coriander
• salt and pepper (to taste)
