Pumpkin cream soup 🎃
One of my favorite fall soups!
In this recipe, I only use vegetables, no added cream, milk, etc. products because:
1. I do not want to make it heavy and greasy.
2. I really love the pure pumpkin flavor, perfectly complemented by seeds and sun-dried tomatoes! Suitable for vegans and vegetarians.
This is an excellent first course or stand alone course!
It’s super light and low in calories, and for an extra source of protein and fiber you can add pumpkin seeds, salad granola (recipe coming soon) or whole wheat croutons!
Ingredients:
1 kg of delicious pumpkin
2 medium onions
2 cloves of garlic
3 medium potatoes
1.5 l vegetable broth or water
Olive oil
Salt pepper
Optional: rosemary, thyme, Sicilian herbs mix, sun-dried tomatoes / peppers, pumpkin seeds, spinach leaf.
