Chicken Burritos
Ingredients for 4 servings
– 4 large tortillas
– Chicken thigh fillets: 900g
– Onion: 1 medium
– Bell pepper: ½
– Garlic: 3 cloves
– Cheese: ~200g
– Crushed tomatoes: 500g (can use tomato paste, canned tomatoes in juice, or fresh tomatoes—balance salt and sugar if using fresh)
Marinade:
– Paprika: 1 tsp
– Chili pepper: 1 tsp
– Vegetable oil: 1 tbsp
– Salt: ½ tsp
– Black pepper: 1 tsp
Sauce Spices:
– Cumin: ½ tsp
– Dried herbs (basil, thyme, oregano): 1 tsp
– Chili pepper: to taste
– Sugar: 1 tbsp
Super Simple Instructions:
1. Marinate chicken in marinade spices for 20–30 minutes.
2. Sear thighs on medium heat, 2–3 minutes per side until golden, then set aside to rest.
3. Lightly sauté onion and bell pepper for 2 minutes, add chopped garlic, stir, then pour in crushed tomatoes. Simmer for 2 minutes.
4. Return chicken to the pan, mix with sauce, cover, and simmer on low heat for ~50 minutes.
5. After 50 minutes, shred chicken into fibers and mix with sauce.
6. Assemble burritos as you like!
Tip: I recommend adding corn to the filling—I would’ve, but I didn’t have any on hand.
