Ingredients
• 2 Chicken Breasts
• 1 cup Brown Rice
• 2 ½ cups Water
• 1 Lemon
• Pepper
• Salt
• Paprika
• Garlic Powder
• Olive Oil
For Platting
• Cilantro
• Lemon Wedges
Cooking Instructions:
Season the Chicken Breasts with Salt, Pepper, Garlic Powder, Paprika, and Olive Oil. Rub it all well through the chicken breast.
In your Yedi Pressure Cooker, add 1 cup of Rice, 2 ½ cups of Water, 1 tsp. of Salt, and 1 tsp. of Olive Oil (for more or less rice, adjust ingredient ratios accordingly). Mix it all well.
Over the rice and water, place your Egg Rack (accessory included), on top place the Steamer Basket (accessory included), and inside line the seasoned Chicken Breasts. Squeeze 1 Lemon over everything – the juices of the lemon, and the chicken will drip over the rice as it cooks given it a delicious taste!
Set up the Yedi Pressure Cooker to “Pressure Cook” on HIGH for 17 mins. Lock the lid, and don’t forget to seal the valve!
Past 17 mins, carefully, and manually move the valve from “Seal” to “Release” and release the pressure inside the pot. Once all pressure has been released, unlock the lead, and carefully remove the chicken and the rice.
Serve warm with touches of cilantro over the rice, and side with Steamed Broccoli, and extra lemon wedges to drip more lemon over the plate al gusto. Enjoy!
