INGREDIENTS:

* 5 lbs potatoes
* 2 eight oz cans of sardines in oil
* 1 shallot onion
* 4 eggs
* oil for deep frying
* cubed mozzarella cheese
* 1/3 cup butter
* 2 cups bread crumps
* 1 cup flour
* 1/2 tsp crushed white pepper
* 1/2 tsp all purpose seasoning
* 1/2 tsp smoked paprika
* salt to taste

INGREDIENTS FOR GREEN DIPPING SAUCE:

* 1 cup fresh spinach
* 1/4 cup basil
* 4 Serrano chilis (substitute with 2 habaneros)
* 4 cloves roasted garlic
* 2 tablespoons of capers (optional, and may substitute with pickles or 1 tbsp of white vinegar)
* salt to taste
* pinch of crushed white pepper
* oil from 2 eight oz cans of sardines
