Adodo is one of the most common and very popular filipino food in the Philippines specially pork adobo. This recipe become an iconic dish worldwide in term of filipino cuisine. It is always present on top of the list as you can find. It has occassionally been considered the unofficial national dish in the philippines even to date. The word “adobo” was derived from the Spanish word of “adobar” that means to marinate.
A marinated dish, typically pork or chicken, or a combinatoion of both. The recipe is always a way of cooking meat in a brine solution with suka (vinegar), soy sauce, garlic, onion, dried bay leaves and peppercorn to achieve extra aromatic flavor. All ingredient are combine together to create such a unique and authentic delicious dish.
The aodobo recipe and way of cooking for filipino and the general description of adobo in Spanish cuisine shared similar characteristics. However, Spanish and Latin American Adobo, generally used chillis, paprika, oregano and tomatoes and their version are spicier or infused with oregano. While the Philippine version of adobo are uses their native ingredient abundantly found in their continent, such as cane and or coconut vinegar, red onion, garlic, black peppercorn, bay leaves, soy sauce and has a salty, sour taste and often sweety taste by adding honey or sugar to get the perfect taste preference.
The Indregients and Procedure on how to cook Pork adobo or Adobong Baboy
1 kilo pork belly cut into cube, defending on your desirable size
1/3 cup regular soy sauce
¼ cup Oyster sauce
½ cup vinegar
1 tablespoon of peppercorn, half whole or half cracked
3-5 pieces dried bay leaves and or 1 inch ginger
2 tablespoon of honey, or you can also used browned sugar
2 medum size onions, chopped coarsely
2 tablespoon od cooking oil, you can used vegetable oil, olive oil, coconut oil it’s up to you.
1 bulb garlic chopped and minced, the more the garlic the better the taste and aroma
1 pack black beans but this is optional
