This week watch me meal prep the following:
1. Sweet Chili Snapper w/ Kale Carrots & Mushroom & Fried Plantains (4 Servings)
• 4 Snapper Fillets
• Sweet Chili Marmalade Sauce (HEB Brand)
• Garlic Powder
• Onion Powder
• Smoked Paprika
• Tony Chachere’s Creole Seasoning
• Black Pepper
• 1tbsp Coconut oil
• 3 handfuls of Kale
• 2 cup shredded carrots
• 1 8oz package of Mushrooms
• Sazon Complete Seasoning
• 3 Plantains
2. Shrimp & Okra Stew w/ Brown Rice (5 Servings)
• 1.5 lbs Shrimp
• Garlic Powder
• Onion Powder
• Smoked Paprika
• Old Bay Seasoning
• Black Pepper
• 1tbsp Coconut oil
• 1 lb Okra
• 1 Stalk Celery
• 3 Roma Tomatoes
• 1 Onion
• 1 Green Onion/Escallion
• 1 Bell Pepper
• 1 tbsp minced Garlic
• 1 Sprig of Thyme
• Habanero pepper (to taste)
• Tony Chachere’s Creole Seasoning
• 2 Cups Brown Rice
3. Vegetables in Indian Butter Sauce w/ Quinoa (4 Servings)
• Half of a Cauliflower
• 1 cup Frozen Peas
• 2 cups Carrots
• 1 Onion
• 1 Green Onion/Escallion
• 1 Bell Pepper
• 1 tbsp minced Garlic
• 1 Sprig of Thyme
• 1 tbsp of Coconut Oil
• Taste of India Butter Chicken Sauce (contains Dairy)
• 1.5 cups Quinoa
