PERI PERI CHICKEN
INGREDIENTS:
6-7 red chili
1/2 red bell pepper
1/2 onion chopped
7-8 cloves garlic
1 tsp oregano
1 tsp sugar
1 tsp salt
1 tsp paprika
2 tbsp lemon juice
2 tbsp red wine vinegar
3 tbsp olive oil
6 chicken leg quarters (3/4lb chicken)
Marinate for 2 hours to overnight.
Bake chicken 400F for 35-45 min. Until the chicken is cooked and internal temperature is 165F
After 30 min take out the chicken and base the chicken with 1 cup marinade that was set aside. it give extra crust and flavor.
This chicken is so delicious.
