Ingredients for:
1) Meatballs:
– Minced Beef – 500 Grams
– Chopped Parsley – ¼ Cup
– Ricotta Cheese – ½ Cup
– Parmesan Cheese– 1/3 Cup
– Egg – 1 Medium
– Salt & Pepper
2) Penne Pasta – 250 Grams
3) Marinara Sauce:
– Olive Oil – 2 Tablespoons
– Chopped Onion – 1 Medium Onion
– Chopped Garlic – 4 Cloves
– Chopped Tomatoes (Can) – 2 Cups
– Water – 1 Cup
– Brown Sugar – 1 Tablespoon
– Salt – 1 Teaspoon
– Garlic Powder – 1 Teaspoon
– Paprika – 1 Teaspoon
– Chili Flakes – 1 Teaspoon
– Oregano – 1 Teaspoon
– Basil – 1 Tablespoon
– Thyme – 1 Tablespoon
– Butter – 1 Tablespoon
4) Other:
– Parmesan Cheese – Garnish
– Fresh Basil – Garnish
Penne Pasta with Meatballs Preparation:
– In a mixing bowl, add the minced beef, ricotta cheese, parsley, breadcrumbs, egg, salt and pepper, and mix to combine the meatballs mixture.
– To prepare the meatballs, form the meat into medium-size balls.
– Preheat some cooking oil in a pan and shallow fry the meatballs for 2 minutes per side.
– Remove the meatballs and set aside on a plate.
– To prepare the penne pasta, add the penne to boiling water ( water+ 1tbsp olive oil + 1 tbsp salt) and cook for 8 to 10 minutes.
– Remove the pasta, drain from the water, and set aside.
– In a saucepan, preheat olive oil and add the chopped garlic and onions. Sweat on medium heat for 2 minutes.
– Add the chopped tomatoes, water, sugar, salt, garlic, paprika, chili flakes, basil, oregano, thyme, and mix to incorporate.
– Add a tablespoon of butter and mix until the butter has completely melted.
– Pour some of the marinara sauce on top of the cooked penne pasta and mix.
– Add the pre-cooked meatballs to the marinara and let simmer on low heat until thickened and reduced.
– Serve the penne and meatballs with some grated parmesan cheese and fresh basil.
