Oze’s Recipes EPS 22 Fish Stew

Ingredients

150 gram king prawns
340 grams mix fish (for pie mix from Tesco)
1 sweet potato chopped in cubes
1 carrot chopped in cubes
1 onion finely chopped
2 celery sticks chopped
1 lemon (half when cooking, haft for serving)
1 can of chickpeas
1 small fresh ginger – chopped
1 green pepper- chopped
Veggie or fish stock
Fresh parsley
6 tbl spoon olive oil
1 tea spoon turmeric
Half tea spoon paprika
Half tea spoon ground cumin
3 tbl spoon apple cider vinegar
1 tbl spoon butter
6 cloves of garlic finely chopped
Pinch of salt and pepper

Preparation

Fry onion and the garlic and add the pepper and rest of the chopped veggies. Add the chickpeas and butter and herbs. Cook for 10 min.
Prepare the stock with 2 cups of water add on top of it. Cook it for 30 min. Than add the sea food and the fish. Cook it for 15 – 20 min.
Serve it with freshly chopped parsley and olive oil and a bit more lemon on the top.
