Oven baked is absolutely one of my favourite ways of indulging on chicken, especially when served hot and spicy. I bring to you my Nigerian inspired spicy chicken with apple slaw on the side. Enjoy, subscribe, like and share.
Ingredients
Chicken and marinade:
4 large chicken thighs
2 tbsp suya spice (see suya spice ingredient below)
2 garlic cloves
~10g ginger
1 1/2 long green chilli
1/2 habanero chilli pepper
1 chicken bouillon cube
1 tsp dried oregano
1 tsp Curry powder
1/2 tsp Salt
1/2 large Onion
1/4 cup Olive oil
Apple Slaw:
1 granny smith apple
1/4 (250g) red cabbage
2 tbsp mayonnaise
1/2 tsp sugar
2 tsp white wine vinegar
Suya Spice Mix – Flavors of Africa:
1/4 cup roasted almonds (blend in a coffee or spice grinder)
2 tbsp cayenne pepper
2 tbsp smoked paprika
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp white pepper
1 chicken bouillon cube
