THE RECIPE
Serves 2-3

INGREDIENTS
1 tbsp oil
1 onion, finely sliced
1 clove garlic, minced
1 celery stalk, finely chopped
1 can chopped tomatoes
1/2 tsp smoked paprika
Salt & pepper
Chilli flakes to taste (optional)
300g mixed seafood (prawns, squid, mussels, scallops etc)

METHOD
Preheat a saucepan Add the oil and gently fry the onion until soft.

Add the garlic, celery and tomatoes. Bring to a quick boil, then reduce the heat and simmer for 5 minutes.
Season with paprika, salt, pepper and chilli if using. Taste and adjust the seasoning if needed, then tip in the seafood.

Pop on the lid, bring to a quick boil again then reduce the heat and gently simmer for 5-6 minutes ( or for the amount of time suggested on teh seafood packaging).

Serve alone for a tasty, low carb meal, or with lots of crusty bread with butter. Yum!
