One pan Traybake Chicken with vegetables and Gremolata.

Super easy and tasty. You can even prepare it beforehand and pop it in the oven, 1 hour before serving.

4 Chicken thighs (or one whole chicken in 4 parts)
4-6 potatoes
2-3 bell peppers
2 Onions
Paprika powder
Salt and pepper
Olive oil

For the Gremolata:
1 clove of garlic
1 bunch of flat leaf parsley
½ chili pepper
Zest of 1 lemon

Clean the chicken and season with paprika powder, salt, lots of pepper and olive oil.
Let it marinade, while you prepare the veggies.
The idea is to have big chucks, because they will be in the oven for an hour.
Cut the potatoes and bell peppers in 4, cut the onions in half. You can also use carrots.
Mix the veggies with olive oil, salt and pepper.
Place all the chicken and vegetables in a tray and bake for an hour at 180C (360F).
During the baking time, prepare the Gremolata:
Chop the garlic, parsley, chili pepper and lemon zest until everything is finely chopped.
Sprinkle this on top of the dish just before serving.
