One pan dishes are probably my favourite go to meals to make when I don’t want to fuss around in the kitchen and this One Pan Garlic & Herb Roasted Chicken with Vegetables is one I love to make often. Perfectly flavoured, full of veggies and all in one pan.
The best thing about this is that you can choose what kind of veggies you prefer and ones you would like to omit. Also depending on how you like them either a bit crunchy or tender then you can cook them for less time. I will be writing down the recipe down below so be on the look out.

RECIPE:
– Chicken Thighs
– 4 large potatoes
– A bunch of asparagus
– A bunch String beans
– 4 large parsnips
– 4 large carrots
– 2 Onions
For The marinade
– 4 tbsp olive oil
– 1 tbsp mixed herbs
– 5 crushed garlic cloves
– 1 tbsp salt
– 1 tbsp cumin
– A tbsp paprika
– Tbsp black pepper
– A tbsp lemon juice
