This is a two-part recipe/road trip adventure video! I got to collaborate with my family for this one which was so fun! My dad helped with the Hummus-making portion while we visited and my brother Danny created “Evie’s voice” for the video. I really hope you give the hummus recipe a try, as it is one of our favorites, so simple, delicious, healthy, and much cheaper than store-bought hummus. We love to eat it with Wasa crackers, which are oil-free crackers with a great crunch and tons of fiber! Trust me when I say you won’t miss the oil in this recipe. Recipe credit goes to Monkey and Me Kitchen Adventures, as I mostly based this recipe off of theirs with just a few tweaks.
The second part of the video details our road trip through pictures and some videos we took along the way. Cormac and I are so grateful for his parents letting us borrow their vintage ’84 Volkswagon Westfalia for 6 weeks as we visited my family in Wisconsin, toured Colorado, and spent some time in Nashville on our way home. We had so many incredible experiences and made some many wonderful memories. We’re so excited to get to share some of them with you all! I have to say it’s definitely not easy living in a van, but I think it challenged us in so many ways. We learned a lot along the way and this journey helped us realize that even though we loved all the places we visited, there just really is no place like home. We’re both feeling rejuvenated and ready to really focus on our passion projects. I won’t spoil any more of the details, so please enjoy the video!
Oil-Free Hummus Recipe
Ingredients:
-2 Cans Chickpeas/Garbanzo Beans
-1/2 Cup Aquafaba
-1/2 Cup Tahini
-1/3 Cup fresh Lemon Juice
– 1 Clove of Garlic (or to taste)
-1/2 Cup Water
-1/2 Teaspoon of Salt
-1/2 Teaspoon of Paprika
-1/2 Teaspoon of Cumin
Instructions:
1) Warm your Aquafaba and Tahini for a few seconds in the microwave. Add them to your food processor and blend for about 5 minutes until they are whipped together well, stopping to scrape the bottom of the bowl and sides if needed.
2) Add the rest of your hummus ingredients and blend together until smooth. Taste-test and make adjustments to your liking.
3) Pour into a container and top with a sprinkle of paprika. Refrigerate and eat as desired!
