Hello Everybody!
Today we have a cook and speed clean with me and boy was this kitchen a disaster!!! My goodness…. It took several hours to just clean the kitchen and I was so tired afterwards I had to cook the following night! Healthier Sausage and Peppers Recipe
Spicy Version
Food ingredients
10-12 Hot Italian sausages (Cut up into pieces)
1 Large sweet potato (cubed)
3 bell peppers (Orange, Yellow or Red) (Sliced)
1 Large onion (Sliced)
20 baby carrots (Sliced)
Olive Oil
Spice Ingredients (I just eye all of the seasoning)
Smoked Paprika
Cheyenne Pepper
Onion Powder
Garlic Powder
Oregano
Salt
Pepper
Vegetable Cooking Instructions:
Cube sweet potato put in pyrex baking dish along with sliced carrot, sliced peppers, and sliced onion. Pour olive oil in, put enough to thoroughly coat all of the veggies (you may need to add more in between cooking if it is looking dry) add seasoning and mix all together evenly coating all of the veggies. I just eyed the seasoning, put your desired amount. Cook at 400 for about 40 minutes checking and mixing every 15 minutes, cook until done, may vary.
Cooking instructions for sausage
Cut up sausage into bite size pieces ( I peeled the casing off you do not have to) place in pan, put olive oil and all of the above seasonings, again I eyed it but you don’t need to go in as heavy as the veggies. Mix around lightly and cook on stove until finished.
Once both veggies and sausage are done mix together in a bowl and enjoy
FOR MILDER VERSION:
Eliminate the Cheyenne pepper completely, use regular paprika and use Italian sausage instead of hot Italian.
TO KEEP IN MIND:
For most families and people you will probably want to cut this recipe in half, I cooked this to last a few days and most people will not need this much.
