Nargisi kofta / Scotch egg/ Egg kofta
Nargisi kofta is boiled eggs stuffed inside a shell of minced lamb/ chicken mixed with some spices,coated in breadcrumbs, and then deep fried until golden and crisp.

Ingredients
For the Kofta
* 1 pound chicken minced
* 1 onion, grated
* 2 tsp ginger garlic paste
* 2 green chilies finely chopped
* 1 tsp paprika powder
* 1/2 tsp turmeric powder
* 1 tsp cumin powder
* 1 tsp coriander powder
* 1/2 tsp garam masala powder
* 6 hard boiled eggs
* Salt to taste
For Deep fry
* 1/2 cup all purpose flour for coating
* 1 large egg , beaten well for coating
* 1 tablespoon milk
* 1 cup breadcrumbs
* Oil for deep frying
Note: The mince meat should be cleaned and drained well. In case of moisture add little bread crumbs.
For the gravy
* 1 tbsp oil
* 1 tsp cumin seeds
* 2 onions, finely chopped
* 1 tbsp ginger garlic paste
* 2 large tomatoes, pureed
* 1/2 cup heavy cream
* 1 tbsp crushed kasuri methi
* 1.5 cups water, or adjust
* Salt to taste
* 2 tbsp Cilantro to garnish
* 1/2 tsp turmeric powder
* 1 tsp red chilly powder
* 1 tsp paprika or adjust
* 1 tsp cumin powder
* 1 tsp coriander powder
* 1 tsp garam masala powder
Preparation
1. In a bowl mix minced meat, grated onions, ginger garlic paste, all spices and salt. Mix all the ingredients together. Let it sit for 30 minutes in the refrigerator.
2. Divide the kofta mix into 6 equal portions, cover the eggs with it and set aside 15 minutes in the refrigerator.
3. Place the flour in one shallow bowl, beat the egg and milk together in another shallow bowl, breadcrumbs, in a third shallow bowl.
4. For deep fry: Start heating some oil in a deep Kadai. Roll these kofta eggs over the flour and then dip them into the beaten egg and then in the bread crumbs and fry them in the heated oil. Fry the koftas on low flame and keep frying them until they turn golden brown. Once it’s ready keep them on a paper towel and keep it aside.
5. Heat a skillet, add oil, add cumin seeds and sauté a for a minute and then add onions and sauté for 4 minutes. Add ginger garlic paste, tomato puree and let the tomato purée cook sometime. Add all the spice powders sauté well and season with salt. Add water and let it boil.
6. Add heavy cream, and crushed dried methi leaves to it. Mix everything properly and adjust to your consistency. Slice the koftas and place them in the gravy.
7. Garnish it with cilantro. Nargisi koftas are ready.
Recipe Notes
* You can skip frying the egg koftas and directly place them in the gravy and cook. You have to increase the cooking time if you decide to do that. Both taste good. I have done that too. Frying the egg koftas make a difference. Try both and see the difference.
* For Air Fryer: preheat the air fryer to 370 degree F. Place the egg koftas in the basket and spray little cooking spray. Cook for 15 minutes and turn the sides in between.
* You can serve just the fried scotch egg as breakfast with your favorite sauce.
