I keep reading about how mushrooms are the best thing for you and your health. I don’t know if this is propaganda from the mushroom growers industry association, but I like to believe it’s true. I do like mushrooms, and I should be eating more of them, and this soup is a great way to consume 8oz in one go. So, if you love mushrooms, make this soup.

In a pot, toss in 2 tablespoons of butter, 1/2 chopped onion and 8oz chopped mushrooms. Cook until the onions are transparent. Then add in 1 cup of chicken stock, 1/4 cup of white wine, 1 teaspoon of worcestershire sauce, 1 teaspoon paprika, 1 teaspoon of thyme, 1 teaspoon of dill and 1/2 teaspoon salt. Allow the soup to reduce by 1/3. Mix 1/2 cup of milk with 1 1/2 tablespoons of flour and pour it into the soup. Stir to thicken the soup. Lastly add in 2 tablespoons of sour cream, 1 teaspoon of lemon juice and 1 tablespoon of parsley. Stir for a minute and serve. Like to serve a crescent roll with soup because croissant and crescent rolls were invented in the Austria-Hungarian Empire.
