This is my interpretation of a North African classic, Moroccan Meatballs.
Served with Cous Cous, all cooked over charcoal/
Ingredients
For the Meatballs
500g ground lamb
1 small onion, finely chopped or grated
3 tbsp chopped fresh parsley
3 tbsp chopped fresh cilantro
1 tsp paprika
1 tsp cumin
1 tsp salt
1/4 tsp black pepper
1/4 tsp turmeric
1/4 tsp ground cinnamon
For the Tomato Sauce
1 tin tomatoes
1 tbs olive oil or vegetable oil
1 medium onion, finely chopped
1 small green pepper, finely chopped
3 cloves garlic, pressed or finely chopped
1.5 tsp paprika
1.5 tsp cumin
1.5 tsp salt
1/4 tsp black pepper
1/4 tsp cayenne pepper
1 bay leaf
1 handful chopped parsley
1 handful chopped cilantro
For Garnish (Optional) fresh parsley or cilantro sprigs
