It is fresh because of the lemons but full of flavors by the saffron and many spices. πWe know that it sounds so difficult to make Chicken Tagine, but it is actually really easy to make. In this video we give you all tips and tricks to make the best Moroccan Tagine.

Ingredients for the Moroccan Chicken Tagine for 4 persons:
1 tablespoon of Ginger
1 Tablespoon of Turmeric
1 Tablespoon of Cumin
1,5 Tablespoon of paprika powder
0.05 grams of Saffron
Pepper
Salt
1 pot of Lemons
3 cloves of garlic
1 large onion
Fresh parsley
Fresh coriander
8 chicken legs
Hand full of olives
Water
Olive oil
Vinegar
Preparations:
1. Cleaning the chicken
– Before you start cooking make sure you wash the chicken very well. Place the chicken in a bowl and fill the bowl with half vinegar and half water
– Let it rest for 10 minutes
– After 10 minutes throw away the water and vinegar and rinse the chicken with some clean water
– Make sure the chicken is not too wet when you are going to marinade it
2. Seasoning the chicken
– Cut the lemons in small parts, throw away the seeds and use the lemon pulp for the marinade (the rest of the lemons will be used later in this recipe)
– Boil water. Fill a cup with water, add the Saffron and let it rest for 5 min
– Now cut the 3 gloves of garlic very small and add it to a big bowl
– Add the lemon pulp
– Add the paprika powder, black pepper, Salt, Ginger, Cumin, Parsley, Coriander, Saffron with a little bit of water, Turmeric, 1 tablespoon of olive oil and mix everything well
– Now add the chicken
– Let everything marinate for at least one hour
3. Making the Tagine
– Cut a big onion very small
– Place the tagine on the stove and heat up the bottom of the tagine
– Heat up 3 tablespoons of olive oil
– When the oil has heated up, add the onion
– Sprinkle some extra turmeric on top on the onion
– Place the chicken on top of everything
– Add a little of the marinade but do not make it too wet
– Close the tagine and let it cook on low fire for 30 minutes
– After 30 min: turn the chicken (first time β the chicken is now cooking for 1 hour)
– After 30 min: turn the chicken again (second time – the chicken is now cooking for 1.5 hours)
– After 30 min: turn the chicken and add the limes and olives and let it cook 30 minutes for one more time
– In total the chicken tagine needs to cook for 2 hours
! Important: Do not open the tagine to many times because it will lose all flavors and the chicken needs to be cooked all time on low / low-medium fire (depending on your stove)
