MEXICAN vegan lentil stew

This stew is 100 % vegan, spicy and full of colours and mexican taste. Serve with rice or tortillas.

Ingredients you will need:
2 dl (7/8 cup) red lentils
2 dl (7/8 cup) corn
1 red bell pepper
4 garlic cloves
1-2 onions
1 can crushed tomatos
1 dl (7/8 cup) coconut milk
2 tbsp soy sauce
2 tsp cajun spice
2 tsp paprika
Black pepper from mill

For serving: rice or tortilla, fresh coriander and lime.
