Ingredients:
• 350 grams of sweet corn
• 250 grams of natural yogurt
• 2 medium onions
• 1 Lemon
• Fresh parsley or fresh coriander•
Spices: red pepper/paprika powder, coriander powder and chili powder.
• Salt and pepper
Preparation:
1. Prepare all the ingredients. Place the 350 grams of corn in a bowl. Cut the onions into small pieces, cut the lemon in two, wash the parsley and cut the long branches. Place the spices on the work table.
2. Start by adding the corn to a medium bowl.
3. Add the medium onions in small cubes.
4. Add all the plain yogurt.
5. Add a tablespoon of red pepper, a tablespoon of coriander powder and a tablespoon of chili powder. If you like spicy, you can add a little more chili powder.
6. Add salt and pepper to taste. Put in the refrigerator for 30 minutes.
7. Take out of the refrigerator and decorate with the parsley in small pieces or with coriander.
* Ideas: you can use this salad as a garnish for rice, tacos, burritos, wraps, eggplants, mashed potatoes, among others. It is also a very practical recipe for MealPrep or to take to work the next day.
