Ingredients:
• 2 cups cooked chickpeas
• 1 red bell pepper , chopped
• 1/4 cup chopped fresh flat-leaf parsley
• 1 chopped red onion
• 1 cup chopped green onion
• 2 tablespoons extra virgin olive oil
• 2 tablespoons lemon juice
• 1/2 teaspoon kosher salt
• 1/2 teaspoon freshly ground black pepper
• 1/2 teaspoon cumin
• 1/2 teaspoon paprika
• 3 tablespoon yogurt
• Olives 10
Instructions
• In a large bowl, add the chickpeas, bell pepper, parsley,olives, red onion, and green onions.
• In a small bowl, whisk together the olive oil,lemon juice and yogurt, and season to taste with the kosher salt ,cumin,paprika,and freshly ground black pepper. Add the dressing to the chickpea mixture and toss to coat.
• Serve immediately or chill up to 4 days. Before serving, add more salt and pepper to taste.
