Hummus is one of the most favoured foods at gatherings. Creamy, savoury, and light, it makes for one of the best dips ever. I want to share with you one of my favourite versions of this dip: Roasted Pepper Hummus.

Serve with your favourite vegetables, crackers, or pita crisps! Even add this delicious spread to your salads and sandwiches.

To make this easy dip you’ll need:

1 can of garbanzo beans
3-4 roasted red peppers
2 cloves of garlic
1 de-seeded jalapeno (SPICY/Optional)
1 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika or chipotle powder
Juice of 1/2 a lemon
1/3 cup or 95g of tahini
1 teaspoon salt – or – salt to taste

Topping:
Sprinkle some of that cumin, paprika, and olive oil on top! Add a pepper to signal its identity to the eaters…

Blitz, chill (or not), serve, ENJOY!
