The Ultimate Keto Paella & Rosé Sangria
Rosé Sangria
Ingredients:
1 – 750ml Bottle of Dry Rosé
1 Cup Anejo Tequila (or Keto friendly spirit of your choice)
1 L of lemon/lime seltzer
1/2 Cup Cinnamon Simple Syrup*
1 cup of strawberries, quartered
1/2 cup of fresh blueberries
1/2 cup of fresh raspberries
1/2 cup of fresh black berries
1/2 of a fresh orange, juiced (optional)
Cinnamon Simple Syrup
Combine 1 Cup Swerve (or Keto Friendly Sweetner of your choice), 1 Cup Water, 5 Cinnamon Sticks in a non reactive sauce pan and bring to a boil.
Simmer for two minutes then remove from heat and allow to cool before using.
Directions:
In a large pitcher combine Rosé, Tequila, Cinnamon Simple Syrup, Fresh Orange Juice & approximately half of the Seltzer Water.
Stir and taste. You may add more seltzer water if you desire.
Pour ice into a glass
Add a few berries
Top with Sangria 😁
The Ultimate Keto Mixed Seafood Paella
w/ Piri Piri Drawn Butter
Serves 4-6
Ingredients
1 LB boneless skinless chicken thighs
1 tsp sweet or smoked paprika
1 tsp ground cumin
Extra Virgin Olive Oil or Avocado Oil
1/2 LB Uncured Smoked Sausage thickly sliced
2 shallots diced
6 garlic cloves thinly sliced
1 TB minced garlic
2 Cups diced tomatoes (canned)
6 cups cauliflower rice (about 1 medium cauliflower)
1/2 tsp saffron threads
1/2 Cup Piri Piri Sauce
1/2 Cup White Wine
1 LB Littleneck clams (cleaned & scrubbed)
1 LB Mussels (cleaned & scrubbed)
1 LB Colossal Shrimp
1 Bunch Asparagus
3 Lemons halved
Pink Himalayan or Kosher Salt
Black Pepper
1/2 LB Unsalted Butter
