Keto Collard Greens
1/2 cup Onions
2 cloves Garlic
2 Tblsp Evoo
1/4 cup of pancetta or bacon
3 cups of broth
Spices:
Smoked paprika
Red pepper flakes
Salt
Pepper
Heat oil in a large pan over medium-high heat. Add pancetta , and cook until crisp. Remove pancetta from pan, Add onion, and cook until tender, about 5 minutes. Add garlic, and cook until just fragrant. Add collard greens, and sauté until they start to wilt (2 minutes).
Pour in chicken broth, and season with salt, pepper, paprika and red pepper flakes. Reduce heat to low, cover, and simmer for 30-35 minutes, or until greens are tender.
