🍗 Recipe: Classic Juicy Roast Chicken
📝 Ingredients:
• 1 whole chicken (about 1.5–2 kg)
• 2 tbsp olive oil or melted butter
• 1 lemon (halved)
• 6–8 garlic cloves (smashed)
• 1 onion (quartered)
• Fresh herbs (rosemary, thyme, parsley) – optional
• Salt & black pepper (to taste)
• 1 tsp paprika
• 1 tsp garlic powder
• 1 tsp onion powder
• ½ tsp chili flakes (optional)
🔥 Instructions:
1. Preheat oven to 220°C (430°F).
2. Clean chicken and pat dry thoroughly.
3. Season the cavity with salt and pepper. Stuff it with lemon halves, garlic, and onion.
4. Mix spices in a bowl: salt, pepper, paprika, garlic powder, onion powder, chili flakes.
5. Rub olive oil/butter all over the chicken, then coat with the spice mix evenly.
6. Tie the legs with kitchen twine and tuck in the wings.
7. Place chicken on a baking rack over a tray. Roast at 220°C for 20 mins, then reduce temp to 180°C (350°F) and roast for 45–60 mins more, basting once or twice with juices.
8. Check internal temp — it should be 75°C (165°F) at the thickest part.
9. Rest for 10–15 mins before carving.
