I bring to you my jollof rice with peppered beef recipe. This is a very popular West African dish, particularly in Nigeria, Ghana and Senegal. It is fondly referred to as the party dish in Nigeria. There is often the debate on what country makes the best Jollof rice, so I hope I’ve made my fellow Nigerians proud with this dish.
Ingredient
Jollof Rice:
3 cups basmati rice (~700g)
3 large red bell pepper (capsicum)
4 medium tomato
1 scotch bonnet chilli or habanero chilli
3 red onion
~10g of ginger
3 garlic cloves
1/3 cup of veg or groundnut oil (68g)
95g tomato paste
1/2 tbsp Sweet or Smoked paprika
2 chicken bouillon cubes (Knorr)
1/2 tbsp salt
1 tbsp curry powder
1/2 tbsp mixed herbs
~3 bay leaves
Peppered Beef:
1.5 kg diced casserole beef
4 cup of beef stock (1L)
Salt to taste
2 garlic cloves
~10g ginger
3 long red chilli
3 long green chilli
1 large red onion
1/3 cup of veg or groundnut oil (68g)
1/2 tbsp of smokey bbq rub or all-purpose seasoning
