Note: This is a all day process please see video.
We had a bit over 13lbs of meat, so remember to adjust ingredients. Joe started the grill 3:30am and meat went on at 5am. Below is your basic dry rub ingredients, Joe tweaked it to how we like it.

Ingredients for rub
1/4 cup paprika
1/3 cup brown sugar
2 tbsp kosher salt
2 tbsp garlic powder
1 tsp cumin
1 tsp cayenne pepper
1 tbsp onion powder
1 tbsp course black pepper
1 tbsp smoked paprika
2 tbsp ground coriander
3/4 tsp mustard powder

*Beer & BBQ sauce*

We love to eat this with bread & butter pickles along with the other sides.
