Jalapeno Fried Chicken
Today we are making Jalapeno Fried Chicken, this jalapeno fried chicken is keto friendly, and low carb made with a mixture of almond and coconut flour. It can be deep fried or cooked in an airfryer
Ingredients
3.5 lbs Chicken Breast and Thighs (We used Boneless Skinless)
2 tbs salt
1 tbs pepper
1 tbs onion powder
1 tbs garlic powder
2 tsp chili powder
2 tsp paprika
1 tbs lemon pepper seasoning
1 tsp cayenne pepper
1 tsp jalapeno seasoning
2 tbs pickled jalapenos and juice
1 cup greek yogurt
1/4 cup almond milk
3 cups Lard
2 cups almond flour
⅔ cup of coconut flour
1 fresh jalapeno
Add all of your chicken to a large bowl and add your seasoning to marinate the chicken. Greek Yogurt, almond milk, salt, pepper, onion powder, garlic powder, chili powder, paprika, lemon pepper seasoning, pickled jalapenos with juice, greek yogurt and almond milk. Combine all ingredients and place in the refrigerator to marinate for at least an hour. Once you are ready to fry we took a fresh jalapeno and chopped that up and cut holes into the chicken to stick slices of jalapenos inside the chicken and then breaded them with the coconut flour almond flour mixture. In a cast iron skillet heat up your lard or cooking oil to 375 degrees and then fry your chicken until the internal temp reaches 165 this took about 3-5 mins per side depending on the thickness of the chicken.
