FISH TACOS 🐟 🌮

A Tuesday staple in many households, offering a plethora of topping options to suit even the fussiest of eaters.
Masa Harina is corn that has been dried, treated with lime and ground to make into a dough flour. You can find Masa Harina in speciality stores or online and is a fantastic pantry staple for making your favourite Mexican cuisine.
Cornflour is different from Masa Harina as it is only made from the endosperm (the starchy part of the corn kernel) and is predominantly used as a thickening agent. In this recipe however, it does help to make the tortillas pliable once they are cooked and cooled.

Tortillas
1½ cups Masa Harina flour
1 tsp salt
2 tbsp cornflour
1 cup warm water
Taco toppings
2 fillets white fish
¼ tsp cumin
¼ tsp chilli powder
¼ tsp smoked paprika
¼ tsp ground coriander
¼ tsp garlic powder
2 tbsp olive oil
¼ head red cabbage, sliced
¼ cup white vinegar
¼ cup corn kernels
¼ cup mayonnaise
1 tbsp sriracha
3 limes
1 avocado, sliced
Bunch of coriander
