Indian Chicken Pulao Oven Bake by Chef Vineet Bhatia
Ingredients:
2 chicken breast, cut into 1.5-inch cubes
1 teaspoon smoked paprika powder
1 teaspoon dried oregano
1 tablespoon lemon juice
Salt
Mix all the ingredients in a bowl and marinate for 10 minutes.
Bake tray:
2 tablespoons oil
1 medium-sized red onion, sliced
1 teaspoon cumin seeds
1 teaspoon garlic, chopped
1/2 teaspoon turmeric powder
1/2 teaspoon cinnamon powder
1 teaspoon dried oregano
Salt
4-5 padron peppers, slit into 2
Mix all the ingredients in a ceramic casserole dish.
Arrange the chicken pieces & padron peppers on the onion mixture.
Cover with a sliver foil and roast in a preheated oven at 200C/390F for 20!minutes.
Remove the foil, take out on chicken pieces. Stir in the pre-cooked rice with the onion mix and place the chicken on the rice.
Bake for another 12-15 minutes till the rice absorbs all the flavours
