I MADE A WHOLE JERK CHICKEN RECIPE
Ingredients:
1-6lb whole chicken (Or any peices of chicken you’d like)
1 med onion
4 sprigs of thyme
1 scotch pepper with the seeds ( this makes for mild heat. Add 2 if needed)
Juice from 2 whole limes
2 tbs soy sauce
2 tbs olive oil
4 cloves garlic
1/3 cup parsley
2 tbs brown sugar
1 tsp cinnamon
2 tsp allspice
1 tbs paprika
1/2 tsp dried thyme
2 dried bay leaves
1 tbs kosher salt
1 tsp black pepper
** There is enough marinade here for 2 chickens. Or, you may freeze half the marinade for 1-2 months.
