Serve the soup with warm Crusty Bread
Ingredients;
300g diced beef cut into small cubes
130g finely cut onion
80g oil
100g diced Red and Green Peppers
100g diced Carrot
100g cubed Potato
Sweet Hungarian Paprika
Garlic
Marjoram
Caraway seeds
Bay Leaves
Salt and Pepper
Sour Cream
Chives
75g Tomato paste
Lemon peel and juice
80g Plain flour
1ltr Beef broth (preferably homemade)
200ml Red wine
Method;
Sauté the onions and garlic until golden brown
Stir through the cubed beef, Paprika, Tomato Paste and flour
Add red wine and reduce
Season with Marjoram, Caraway seeds, Bay leaves, Salt and Pepper, Lemon peel and juice
Add Beef Stock
Simmer the soup till the meat is tender
Add carrots, Potato cubes and peppers and cook till soft
If necessary thicken the soup with cornflour
Finish the winter soup with sour cream and chives
Serve the soup with warm Crusty Bread
