Hungarian cabbage rolls with sauerkraut & smoked meat

Erika’s Cabbage Rolls

Serves a Huge family!! When I made this dish, it was for the purpose of freezing some for the winter.. You can cut the recipe in half for smaller portions.

2 med onions finely chopped
3 cloves of garlic
1 head of green cabbage
2x 750ml sauerkraut
1 piece of smoked meat like turkey or pig….
2 lb ground pork
2.5 c quick rice
2 tbsp red paprika
1 tbsp black pepper
salt to taste

-cook cabbage in water till its soft, 10 min each layer.
-remove each layer onto plate.
remove all hard parts from leaves with knife, if leaves are big cut in half.
-sautee onion and garlic.
-place ground pork in large bowl, add all spices. and sauté onion mixture. Mix well add rice and mix again, till well blended.

– spray pan with oil, place sauerkraut and left over cabbage (scraps) into bottom, place in smoked meat.
– stuff leaves with meat mixture, roll and tuck in end. Place in layers into pan.
– Cover with left over sauerkraut.
– pour hot water over cabbage rolls till covered.
– put in pre heated @ 400˚C oven and bake for about 2hrs or until cooked.
– Serve and enjoy!
– You can serve with some sour cream, so delicious!!
