Hummus with Roasted Red Pepper and Garlic
Ingredients-
150 gm chickpeas
1 Red bell pepper
1 Garlic bulb
1tbsp Tahini
1tsp salt
1/2 tsp sugar
1 to 2 tbsp lemon juice
2 to 3 tbsp extra virgin olive oil/rice bran oil/canola oil
4 to 5 tbsp water
Prep time – 30 mins
Cook time – 20 mins
Total time – 50 to 60 mins
Instructions-
1)Soak chickpeas in a large bowl. Leave it overnight.
2)Next day drain the water and boil chickpeas in the cooker. Let it cool down.
3)Preheat the oven 375 degrees Fahrenheit.
4)Place the red bell pepper and garlic in one ceramic bowl or cast iron pan, drizzle a little oil and bake it in the oven for 20 to 25 mins. Let it cool down
5)Now put the boiled chickpeas, roasted bell pepper, garlic, salt, sugar, lemon, tahini and olive in a mixer or food processor. Blend mixer until you get the desired creamy consistency.
6)Add salt lemon or dried red pepper as per the taste.
7)Serve chilled. Drizzle it with some olive oil and paprika before serving.
8) Enjoy with Pita bread / toast.

It’s one of the easiest recipes to make. It’s one of the quickest recipes and has a creamiest texture.
Once the chickpeas are boiled and cooled, peel off the skin and use only the chickpeas to get creamy and smooth hummus. It will also give the hummus a silky smooth texture.
I am a fan of Garlic, but control yourself when you add garlic as it has a strong flavor. In this recipe I burnt the garlic which gives a unique flavor to the hummus.
Hummus goes well with Pita bread and toast. Basically it goes well with everything.
