Hi there! Spatchcock chicken is so easy to make, and it cuts down the roasting time by so much! Its definitely one of my favourite ways to make chicken. I also love this simple maple glaze, which you can through together in a few minutes!
Ingredients
Whole Chicken
Olive Oil, 3 tbsp
Salt, 1.5 tsp
Pepper, 1.5 tsp
Garlic, 6 cloves diced
Smoked Paprika, 1 tbsp
Lemon Juice, 3 tbsp
Maple syrup, 3 tbsp
Method
1. I used an extra large chicken, cut out the back bone of your chicken by using sharp scissors. Open up the chicken more by making a small cut in between the breast bones, or by pressing the chicken down.
2. Prepare the marinade by mixing together 3 tbsp of olive oil, 1.5 tsp of salt, 1.5 tsp of pepper, 6 cloves finely chopped garlic, 1 tbsp of smoked paprika, 3 tbsp of lemon juice and 3 tbsp of maple syrup. Pour over the chicken, making sure it is completely covered with the marinade
3. Roast in oven at 200 C fan, baste the chicken around twice in its juices, if the chicken is getting to dark, cover it with foil for the remaining cooking time
4. A spatchcock chicken takes around half the time a normal chicken takes to roast. The juices should run clear if the chicken is cooked. Enjoy! This can be served with numerous sides!
