How to Smoke a Pork Butt

Welcome to Legacy Barbecue! We are glad to have you! In this video we will talk about how to smoke a pork butt. Pork butt’s are a great way to start out in BBQ and Really easy to do! (sorry for the glitch in the video. Two segments got flipped but should be easy to follow)

Here’s how I like to do mine:

Injection: https://kosmosq.com/barbecue-injections/

Rub:
1/2 C Brown Sugar
1/4 C Smoked Paprika
1/4 C Hungarian Paprika
1 TBS Black Pepper
1 TBS Salt
1 TBS Chili Powder
1 TBS Garlic Powder
1 TBS Onion Powder
1 TEA Cayenne
1 TEA Mace

Sauce:
1/2 Onion
1/2 Garlic Clove
1 1/2 C Cherries (pitted)
1/4 C Cherry Soda
1 TBS Dijon Mustard
1 TBS Tomato Paste
2 TEA White Wine Vinegar
1 TEA Chili Powder
1 TEA Cumin
Cook Onion and Garlic in Oil. Add Cherries. When complete, Blend all ingredients together until smooth and saucy!

Process:
-Start by trimming the butt to your liking
-Next we want to inject
-After Injecting, Dry off and rub with seasoning
-Prepare the Smoker for cooking at 275deg
-Smoke pork butt, Spraying about every 1 1/2 hrs with a spritz
-When the Internal Temp reaches 165deg its time to wrap
-Spray butter and place more BBQ rub on to foil
-Wrap tight and place back on the smoker until 203 IT temp
-Place in cooler or warm box for a good hour or two to let rest
-Process the pork and and a little more BBQ Rub and top with sauce!
-DIG IN!!
