1. Zucchini and red peppers fritters
INGREDIENTS 2 zucchinis 1 red bell pepper 200g grated cheese 2 big eggs Salt and pepper 125g flour METHOD
Cut zucchinis and pepper. Let it dry for some time. Mix grated cheese with eggs, flour, salt and pepper.
Add dried zucchinis and pepper. Fry it in semi-deep oil.
2. Vegetable fritters
INGREDIENTS 2 potatoes 1 carrot, peeled 1 cup green onions 1 tsp vegetable oil 3 tbsp corn starch salt 1/2 tsp paprika METHOD 1. Cut the potatoes into slices and cook until tender 2. Cook carrots in a pot 3. Cut the green onion 4. Finely grind boiled carrots 5. Mash the potatoes, mix all the ingredients. 6. Transfer to a zip bag and squeeze in preheated oil
3. Chicken and sweetcorn fritters
INGREDIENTS
2 Chicken Breasts. 2 Eggs. 75g Flour. 100g Mozzarella Cheese. 125g Sweetcorn. 75g Mayonnaise. 15g Chives (snipped). Salt. Pepper. Cooking Oil.
METHOD
Dice your chicken in to 1cm chunks.
Place the chicken in a bowl with the eggs, flour, cheese, sweetcorn, mayonnaise, chives, salt and pepper and mix to form a sticky ‘paste’.
Your hands are the best tools for this job.
Place a little cooking oil in the base of a frying pan and take an ice cream scoop of the mix into the pan over a medium heat.
Fry for 3-4 minutes.
Flip and fry for a further 2-4 minutes or until the chicken is cooked through.
Serve with sweet chili sauce or your favourite dip.
