In this video we share how to make stew chicken with rice and beans with coconut milk. This is a traditional meal from Belize. And is one of the traditional foods listed on the menu in many of the island’s resorts.
INGREDIENTS
Nutrition
1 whole chicken, cut up
Creole Seasoning (green container can) sold in stores not seafood Seasoning.
2 tablespoons tameric
2 tablespoons achiote paste (called red recado in Belize) or substitute with Paprika.
1 yellow rough chopped onion or substitute with green onions 3 to 4 of them.
1stack of cilantro rough chopped
1 whole potato 🥔 and 1 whole tomatoe
5 garlic cloves or use garlic powder to substitute.
1 Can of Coconut milk 1/2 of the can to add into chicken and other 1/2 of the can of the Coconut milk for the rice and beans
2 teaspoon of thyme
1 Can of Red beans
1⁄2 teaspoon fresh ground black pepper
1 -2
tablespoon coconut oil to fry chicken in a frying pan just to brown.
1 -2 cups of
water, to cover
add 1 Can of Red beans with its natural juices to your rice after washing and draining. Then salt to flavor along with black pepper.
Use finger test to add correct amount of water to your rice and beans.
