Cut up your chicken into the size pieces you want. Season them with salt and marinade the chicken pieces in buttermilk for 4 to 8 hours. For the breading, I used all purpose flour with a few pinches of salt and pepper.
Heat the oil to 350 degrees and carefully set a few pieces of chicken in at a time. Cook the fried chicken until it is golden brown and reaches an internal temperature of at least 165 degrees.
Before the fried chicken cools, brush it with the homemade spicy garlic sauce. This makes for a really spicy chicken but the brown sugar gives it a nice balance. Enjoy with an ice cold beverage 🙂
The spicy garlic sauce recipe is:
1 clove of garlic minced
1/2 teaspoon of ground cumin
1/2 teaspoon of smoked paprika
1 tablespoon of cayenne pepper
1 tablespoon of brown sugar
1/4 cup of oil (I used peanut oil but you could also use olive oil).
