Shakshuka is a hearty, filling and comfort food. It’s an amazing North African delicacy which is simply eggs poached in a rich, flavorful and spicy tomato sauce which includes; a combination of tomatoes, onions, garlic, bell peppers, a few traditional spices sautéed in olive oil and simmered all together in one pot. SHAKSHUKA RECIPE
Ingredients:
1 large yellow onion
3 cloves garlic, crushed
1 tsp ground cumin
1 tsp coriander powder
1 tsp paprika
1 tsp ground nutmeg
3 medium size bell peppers; yellow, green and red
4 Tbsp olive oil
2 Tbsp tomato paste
1 can 28 oz, (400g) diced tomatoes or ripe large regular tomatoes, peeled and diced
1 tsp cayenne pepper
1 tsp salt
½ tsp freshly ground black pepper
1 chilli pepper, seeded and sliced
5 large organic eggs
3 Tbsp freshly chopped parsley
Crumbled feta cheese
500g Italian sausages, chopped
Toasted bread or Arabian flat bread for serving
Directions:
1. Prepare and chop all the vegetables; onions, bell peppers, jalapeno pepper and tomatoes if using fresh tomatoes. Place a heavy bottomed pan on the heat over medium high heat. Once the pan is hot add olive oil and heat it up until it begins to creep around the pan. Add the sausages and sauté until browned. Remove sausages from the pan and transfer into a bowl.
2. Add the diced onions and sauté for about 5 minutes until soft and translucent.
3. Add crushed garlic and sauté until fragrant, about 1 minute. Stir and add the diced bell peppers and jalapeno pepper. Cook until soft.
4. Add all the dry spices; paprika, cumin powder, coriander powder, cayenne pepper and ground nutmeg. Stir to combine and cook for about one minute until fragrant.
5. Add the sausages back into the pan and stir to combine with the vegetables.
6. Add tomato paste and cook while stirring constantly for about 2 minutes, until the tomato paste has browned on the pan. Add the diced tomatoes and cooked until softened.
7. Season with salt and pepper, stir and let the sauce simmer under medium heat until the vegetables are softened and the flavors are well blended.
8. Once the sauce is thick enough make depression or small wells using the cooking spoon, this is where you’ll place the eggs.
9. Crack and add the eggs one at a time and remove any shells that may sneak in. Then gently add the eggs on the wells in the sauce and season with salt and pepper on the eggs. Cover with a lid and let it simmer for about 5 -8 minutes to cook the eggs. You can cook for a longer time if you want the eggs well done or a shorter time if you want them soft.
10. Keep an eye on the eggs and remove them from the heat once cooked to your desire. Sprinkle some crumbled feta cheese and freshly chopped parsley. Drizzle some olive oil and serve with some toasted bread while hot. Enjoy!
