I already made two batches of Zucchini – tomato Salsa – YUM!

I had 35lbs of GREEN TOMATOES! I ended up with 19 Pints and 2 Quarts of Salsa Verde. A jar of both the Zucchini – Tomato Salsa and the Salsa Verde will make great gifts!
Ingredients
I weighed and measured my green tomatoes. Rough numbers – 12.5 cups = 5lbs
17.5 lbs of tomatoes (sliced in quarters and roasted)
17.5 lbs of tomatoes (sliced in quarters – Fresh)
10 medium onions – roasted
10 large bell peppers – roasted
10 jalapeno peppers – roasted – optional (but highly recommended!)
6-8 garlic clove (I used 6 tablespoons of minced garlic)
4 tablespoons of paprika
4 tablespoons of dry mustard
2 tablespoon of garlic powder
2 tablespoon of coriander
2 tablespoon of salt
2 tablespoon of cumin
2 tablespoon of ground pepper
6 tablespoons of sugar
2 cup of white vinegar
2 cup of lemon juice
Taste test before canning to ensure it has the flavour you want. Remember that every tomato is different and will provide it’s own unique taste.
Optional – 1 – 2 cans of tomato paste – this depends on the tomatoes you use. I used mainly cherry tomatoes and did not have an excessive amount of juice and didn’t need them.
Water bath the jars for 15 minutes once the water is fully boiling.
